Home Cookin'


My mom and I have been making a regular time to spend time together. It's been enjoyable. I've found it a fun way to prompt me to try a new recipe once in a while.

Today's recipe was one I would definitely like to make again...It's quick to assemble and smells sooooo good while it's baking and tastes DELICIOUS! Here is the recipe so you can try it, too!

Sour Cream Blueberry Cake

1 C. Butter
2 C. Sugar
2 Eggs
1 C. Sour Cream
1/2 t. Vanilla Extract
2 C. Cake Flour
1/4 t. Salt
1 t. Baking Powder
1/2 C. Blueberries, well drained

Filling:
1/2 C Brown Sugar, packed
1 t. Cinnamon
1/2 C. Chopped Nuts
Mix until combined.

Cream butter & sugar; add eggs. Fold in sour cream and vanilla. Sift together dry ingredients. Add to mixture. Fold in blueberries. Pour 1/3 batter into a greased and floured fluted cake pan. Sprinkle with half the filling mixture. Pour 1/3 batter over top. Sprinkle with remaining filling. top with remaining batter. Gently swirl cake to lightly mix. Bake at 350 degrees F for one hour. Cool and invert onto a cake plate. Dust with powdered sugar. Serves 12 to 16. ENJOY!!
